The Story

Echemo Espresso is a refreshing, delicate organic Ethiopian from third-generation producer Khalid Shifa's 35-hectare farm near Agaro, Goma. The heirloom cultivars, originally selected by Khalid's grandfather from wild trees in the nearby Coche forest, are wet fermented for 24 hours, washed, and shade-dried for 12 to 14 days on elevated tables. Tim Wendelboe's 2023 farm visit brought protocol improvements including daily lot separation, grain pro storage, and vacuum packing at a smaller dry mill, resulting in cleaner, more expressive coffees with notes of white tea, florals, and stone fruit.
