The Story

Sipstruck's Diego Bermudez Tres Leches is reportedly Diego's personal favorite, and it's easy to understand why. This special lot undergoes an elaborate 72-hour anaerobic fermentation in water enriched with a Lactobacillus milk culture medium, creating a dessert-like profile with cardamom, vanilla cake, and honey notes. After ozone disinfection of the ripe cherries, the coffee is pulped and combined with leachates from the cherry fermentation to enhance flavour precursor development, then treated with thermal shock to lock in the complex aromatics before drying. The result is a sweet, full-bodied coffee with lower acidity that performs beautifully as either espresso or filter, delivering what Sipstruck describes as cake in a cup.
