The Story

If you've ever wondered how far coffee processing can push a cup beyond what you'd expect from a bean, this is your answer. Grown at 1,800-2,200 MASL in Cauca, the slow cherry maturation at altitude already sets this one up for something special, but it's what happens at Granja Paraiso 92 that makes it genuinely unlike anything else. The double anaerobic process involves two separate sealed fermentation stages that build layer upon layer of fruit intensity in a way that more conventional processing simply can't replicate. This isn't a coffee for everyone, and that's kind of the point. What ends up in the cup is bold, tropical, and unapologetically expressive: lychee and peach up front, a playful fruit candy sweetness through the middle, and a rich, syrupy finish that lingers long after the last sip. Brewed as a light-roast pour over it's vibrant and complex; over ice it's borderline dessert.
